Christmas Apple Cake

Here is one of my original cake recipes.  This is definitely one of my favorites around Christmas.  It is basically easy to make and is great served hot with ice cream on top or just by itself cold.

2 apples, peeled and diced
1 tablespoon vanilla
3 tablespoons sugar
1 tablespoon baking powder
1 tablespoon cinnamon
4 eggs
1 cup oil (vegetable, corn, safflower, etc)
2 cups sugar
3 cups flour
Mix sugar, baking powder and cinnamon with apples.  Add vanilla.
Let stand.
Beat eggs.  Blend in oil.  Gradually add sugar (These 3 steps can be done with a mixer or by hand, but it is best to use a mixer to get the mixture as smooth as possible).
Gradually stir in flour until all blended.  Fold in apple mixture and mix well.  Pour into greased bundt or angel cake pan.  Bake at 375F (190C) for about 1 hour 15 minutes (a narrow knife inserted comes out clean).
