Vegetable Soup

This is a very tasty soup recipe to make and it's quick and easy.

self-made soup stock, or instant soup stock cubes.
1 Large Carrot, skinned, cut and sliced into small pieces
1 Large Onion, cut and sliced into small pieces
1 Potato, skinned, cut and sliced into small pieces
1/2 cup of small mushrooms
1 Broccoli bulb, cut into small pieces (you can also use the stalk)

Bring 1.5 liters of soup stock (or water if using stock cubes) to a boil in a pot.  First add carrot and onion pieces.  After about five minutes, add stock cubes (if using water until now).  Add potato.  When potato is soft enough to cut easily with the back of a knife, add mushrooms and broccoli and boil for about three minutes.  Remove pot from heat and serve.

Tip: Boiling or cooking vegetables too long will make them mushy and will destroy any vitamins and nutrition within.  So, anytime when using vegetables in cooking (unless otherwise stated) try to cook them only long enough to soften slightly and bring out the flavor of the vegetable.
