Mashed Potatoes are one of my favorite dishes in the whole world. I love a good dish of mashed potatoes for any meal of the day...spread on bread, mixed with vegetables, or just plain out of the pot. I also can't stand when a good mashed potato dish is combined with lots of butter and lard to add an addictive taste. Trust me, if seasoned just right, it is addictive all on it's own.
So, here is my simple recipe:
Get two cloves of garlic and brush generously with olive oil, then bake in an oven for 10 minutes at 350F. Peel 5 potatoes and cut into one inch pieces. Bring water to a boil and put potatoes in and boil until soft enough to cut through effortlessly with the back of a knife. Drain, but leave in at least two cups of the boiled water. Mash with a masher. Add salt, pepper and a small cube of butter and mix while potatoes are still very hot. Mince the garlic and put into potatoes and stir. Continue stirring while adding salt, pepper and to taste. Enjoy.
How many people this feeds depends on how much self control you have while you can smell it. hehehe
